A warm bowl of miso udon noodle soup packed with umami flavors, teriyaki mushrooms, and nutritious ingredients, perfect for weeknight dinners.
Ingredients
- 8 oz udon noodles
- 4 cups vegetable broth
- 2 tbsp miso paste
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 8 oz mushrooms, sliced
- 2 tbsp teriyaki sauce
- 2 green onions, sliced
- Sesame seeds, for garnish
Instructions
- Cook udon noodles according to package instructions until al dente, then drain and rinse.
- In a pot, bring vegetable broth to a simmer. Stir in miso paste, garlic, and ginger until well combined.
- In a skillet, sauté sliced mushrooms with teriyaki sauce until caramelized.
- Add cooked udon noodles to the broth, followed by sautéed mushrooms. Simmer for a few more minutes.
- Serve in bowls, garnished with sliced green onions and sesame seeds.
Notes
