Ingredients

  • 8 oz udon noodles
  • 4 cups vegetable broth
  • 2 tbsp miso paste
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp teriyaki sauce
  • 2 green onions, sliced
  • Sesame seeds, for garnish


Instructions

  1. Cook udon noodles according to package instructions until al dente, then drain and rinse.
  2. In a pot, bring vegetable broth to a simmer. Stir in miso paste, garlic, and ginger until well combined.
  3. In a skillet, sauté sliced mushrooms with teriyaki sauce until caramelized.
  4. Add cooked udon noodles to the broth, followed by sautéed mushrooms. Simmer for a few more minutes.
  5. Serve in bowls, garnished with sliced green onions and sesame seeds.

Notes
