Ingredients
- 1 lb fresh green beans, trimmed
 - 2 medium potatoes, diced
 - 1 cup diced fresh tomatoes
 - 1 small onion, chopped
 - 2 cloves garlic, minced
 - 2 tablespoons olive oil
 - 1 teaspoon dried oregano
 - Salt and pepper to taste
 
Instructions
- Heat olive oil in a Dutch oven over medium heat. Add chopped onions and minced garlic, sautéing until fragrant.
 - Add diced potatoes and cook until tender, about 10-15 minutes.
 - Stir in the green beans and cooked tomatoes, along with oregano, salt, and pepper.
 - Cover and let simmer for 15-20 minutes, or until green beans are crisp-tender.
 - Taste and adjust seasoning if necessary. Serve warm.
