Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground turkey
  • 1 medium onion, diced
  • 2 bell peppers, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup low-sodium chicken broth or water
  • Squeeze of lemon
  • Chopped parsley, for garnish


Instructions

  1. Heat olive oil in a large heavy skillet over medium-high heat.
  2. Sear ground turkey in an even layer without stirring for 2-3 minutes, then break it up and brown for another 2-3 minutes.
  3. Add onion, bell peppers, and garlic; cook until peppers are crisp-tender, about 4-5 minutes.
  4. Stir in tomato paste, smoked paprika, cumin, salt, and black pepper; deglaze with chicken broth and simmer for 1-2 minutes.
  5. Finish with a squeeze of lemon and chopped parsley, then serve hot.

Notes
