Description

A hearty breakfast hash featuring smoky kielbasa, colorful veggies, and crispy potatoes, perfect for busy mornings or leisurely brunches.


Ingredients

  • 4 cups potatoes, diced
  • 1 lb kielbasa, sliced
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish
  • Fresh chives, for garnish
  • 4 eggs (optional, for serving)


Instructions

  1. Parboil the diced potatoes in salted water until just tender, then drain well.
  2. In a hot skillet, add olive oil and cook the parboiled potatoes until golden brown and crispy.
  3. Add the sliced kielbasa to the skillet and cook until browned.
  4. Toss in the diced bell peppers and onions, seasoning with salt and pepper, and cook until vegetables are tender.
