Ingredients
- 4 cups potatoes, diced
- 1 lb kielbasa, sliced
- 1 cup bell peppers, diced
- 1 cup onions, diced
- 2 tablespoons olive oil

- 4 eggs (optional, for serving)
Instructions
- Parboil the diced potatoes in salted water until just tender, then drain well.
