Description

Delightful cookies filled with sweet fillings, perfect for Purim celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Filling of choice (e.g., poppy seed paste, apricot jam)


Instructions

  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. In another bowl, cream together butter and sugar until light and fluffy.
  3. Add the egg, milk, and vanilla extract to the butter mixture; mix well.
  4. Gradually add the dry ingredients to the wet ingredients until a dough forms.
  5. Chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the dough to about 1/4 inch thick.
  8. Cut into circles using a cookie cutter or glass.
  9. Place about a teaspoon of filling in the center of each circle.
  10. Fold the edges of the dough to form a triangle shape and pinch the corners to seal.
  11. Place on a baking sheet lined with parchment paper.
  12. Brush with egg wash (if desired) for a golden finish.
  13. Bake for 20 minutes or until lightly golden.
  14. Allow to cool before serving.
