Instructions
- Begin by slicing zucchini and any optional vegetables like bell peppers or eggplant. Chop the olives and sun-dried tomatoes, then cube the chicken into bite-sized pieces for even cooking.
- In a generously sized baking dish, combine the chicken, zucchini, olives, sun-dried tomatoes, and your chosen Mediterranean herbs. Season with salt and pepper, ensuring everything is evenly mixed for a well-rounded flavor.
