Ingredients
- 8 oz Lean Flank Steak
- 2 cups Baby Bok Choy
- 1 medium Red Bell Pepper
- 4 cloves Garlic
- 1 tbsp Fresh Ginger
- 3 tbsp Low-Sodium Soy Sauce
- 1 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 1 tbsp Cornstarch
- 2 tbsp Water
- 1 tbsp Hoisin Sauce
- 1 tbsp Sriracha
- 2 tbsp Green Onions
- 1 tbsp Sesame Seeds
Instructions
- Slice the flank steak thinly against the grain.
- Wash bok choy and separate stems from leaves. Slice red bell pepper, mince garlic, and grate ginger.
- Heat sesame oil in a skillet, add flank steak, and stir-fry for 3-4 minutes.
- Remove beef and stir-fry garlic and ginger until fragrant.
- Add bok choy stems and red bell pepper, stir-frying for 2-3 minutes.
- Add bok choy leaves, cooking for another 1-2 minutes.
- Mix soy sauce, rice vinegar, cornstarch, and water in a bowl; pour into skillet with vegetables and beef.
- Cook for another minute until sauce thickens.
- Stir in hoisin sauce and sriracha, mix well, and remove from heat.
- Serve garnished with sliced green onions and sesame seeds.
Notes
Best served hot over rice or noodles. Can be customized with your favorite veggies or made vegetarian with tofu.
