Ingredients
- 1 lb ground bison
- 1 cup breadcrumbs
- 1 small onion, minced
- 1 egg
- 1/2 cup chopped cranberries
- Salt and pepper to taste
- 1 tbsp fresh herbs (such as parsley or thyme)
- 1 cup wild rice
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix ground bison with breadcrumbs, minced onion, egg, spices, and chopped cranberries until just combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake the meatballs for 20-25 minutes, or until they reach an internal temperature of 160°F (71°C).
- Prepare the wild rice according to package instructions.
- Serve the meatballs over wild rice and garnish with fresh herbs.
