Description
A delightful pizza combining earthy flavors of wild mushrooms with a crispy crust, perfect for mushroom lovers.
Ingredients
- 2 cups All-Purpose Flour
 - 1 teaspoon Salt
 - 1 teaspoon Sugar
 - ¾ cup Warm Water
 - 1 packet Active Dry Yeast
 - 2 cups Assorted Wild Mushrooms (shiitake, oyster, cremini)
 - 2 tablespoons Extra Virgin Olive Oil
 - 3-4 cloves Garlic (minced)
 - 1 tablespoon Fresh Thyme Leaves
 - 1.5 cups Shredded Mozzarella and Fontina Cheese
 - ½ teaspoon Kosher Salt
 - Freshly Cracked Black Pepper (to taste)
 - 1 handful Fresh Arugula (for serving)
 
Instructions
- In a bowl, combine flour and salt.
 - Dissolve sugar in warm water and add yeast. Let sit until frothy.
 - Mix yeast mixture with flour until a dough forms. Knead for 8-10 minutes.
 - Place in a greased bowl, cover, and let rise for at least 1 hour.
 - Clean and slice the mushrooms.
 - Heat olive oil in a skillet, sauté mushrooms with a pinch of salt for about 5 minutes.
 - Add garlic and thyme, cook for 2-3 more minutes until tender.
 - Preheat oven to 475°F (245°C) and heat a pizza stone.
 - Punch down the dough, roll out to 12 inches, and transfer to parchment paper.
 - Distribute sautéed mushrooms, then sprinkle cheese over the top.
 - Transfer to the oven and bake for 12-15 minutes until golden.
 - Let cool, toss arugula with olive oil and salt, and top pizza before serving.
 
Notes
Use a mix of wild mushrooms for varied flavor. Don’t rush the dough rising process for better texture.
