Description

A classic comfort food soup made with pasta, beans, and vegetables in a hearty broth, perfect for cozy family dinners.


Ingredients

  • 2 tbsp Olive Oil
  • 1 lb Ground Beef
  • 2 cups Diced Carrots
  • 1 cup Diced Onion
  • 1 cup Diced Celery
  • 4 cloves Minced Garlic
  • 28 oz Crushed Tomatoes
  • 14.5 oz Diced Tomatoes
  • 2 cans Red Kidney Beans
  • 2 cans Cannellini Beans
  • 4 cups Beef Broth
  • 2 tbsp Italian Seasoning
  • 1 tsp Pepper
  • 1 tbsp Salt
  • 2 Bay Leaves
  • 1 cup Ditalini Pasta


Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat.
  2. Transfer the cooked beef to the crockpot.
  3. Add diced carrots, onion, celery, and garlic to the crockpot.
  4. Pour in the crushed tomatoes, diced tomatoes, kidney beans, cannellini beans, and beef broth.
  5. Stir in the Italian seasoning, pepper, salt, and bay leaves.
  6. Cover and cook on low for 6-8 hours or on high for 4 hours.
  7. About 30 minutes before serving, stir in the ditalini pasta. Remove the bay leaves before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Enhance flavor by preparing a day ahead.
