Description

A flavorful and juicy chicken meatloaf with a cheesy garlic crust, perfect for weeknight dinners.


Ingredients

  • 1 lb Ground Chicken
  • 1 cup Parmesan Cheese, grated
  • 1 large Egg
  • 1 cup Breadcrumbs
  • 3 cloves Fresh Garlic, minced
  • Salt and black pepper, to taste
  • Italian seasoning, to taste
  • Fresh parsley, optional


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, parmesan cheese, minced garlic, breadcrumbs, egg, and optional parsley. Season with Italian seasoning, salt, and pepper.
  3. Mix everything together using your hands until just combined.
  4. Scoop the meat mixture onto a lined baking sheet or into a greased loaf pan.
  5. If desired, sprinkle more parmesan on top.
  6. Bake for 40-50 minutes, or until a thermometer reads 165°F (74°C).
  7. Let it rest for a few minutes before slicing and serving.

Notes

This meatloaf rehydrates well, making it great for leftovers. Pair with mashed potatoes or veggies. Can be stored in an airtight container for up to 4 days.
