Description

Delicious calzones filled with creamy ricotta, fresh spinach, and savory mushrooms, perfect for family dinners and gatherings.


Ingredients

  • 3 cups All-Purpose Flour (or whole wheat)
  • 2 teaspoons Active Dry Yeast
  • 1 cup Warm Water (about 110°F or 43°C)
  • 2 tablespoons Olive Oil (or melted butter)
  • 1 teaspoon Salt
  • 1 cup Ricotta Cheese (or cottage cheese)
  • 1 cup Mozzarella Cheese (low-moisture)
  • 1 cup Sautéed Shiitake Mushrooms (or other mushrooms)
  • 2 cups Fresh Spinach (or kale/Swiss chard)
  • 2 cloves Garlic (minced)
  • 1 cup Marinara Sauce (for dipping)


Instructions

  1. In a large bowl, mix warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. Add olive oil, salt, and flour gradually. Stir until a dough forms.
  3. On a floured surface, knead the dough for 5-7 minutes until smooth. Place it in a greased bowl, cover with a towel, and let it rise for about 1 hour, or until doubled in size.
  4. In a skillet, heat oil and sauté garlic until fragrant. Add spinach and mushrooms, cooking until the spinach wilts. Remove from heat and stir in ricotta and mozzarella.
  5. Preheat oven to 425°F (220°C). Punch down the risen dough and divide it into 6 equal pieces. Roll each into a circle about 6 inches wide.
  6. Place a generous scoop of filling on one half of each circle, leaving a border. Fold the other half over and seal tightly.
  7. Place calzones on a greased baking sheet and bake for 20-25 minutes until golden brown.
  8. Let cool for a few minutes, then serve with marinara sauce for dipping.

Notes

For a shinier crust, brush calzones with olive oil before baking. Customize fillings to your preference.
