Description

A set-it-and-forget-it dish featuring tender chicken thighs and fluffy rice, infused with fresh lemon juice and herbs.


Ingredients

  • 2 lbs boneless chicken thighs
  • 1.5 cups long-grain white rice (rinsed)
  • 3 cups chicken broth or veggie stock
  • 1/4 cup freshly squeezed lemon juice
  • 2 teaspoons dried Italian herbs or Herbes de Provence
  • Fresh garlic and onion (or powder if needed)
  • Olive oil
  • Salt and pepper to taste
  • Teaspoon of paprika (optional)
  • Butter (optional)


Instructions

  1. Rinse the rice to remove excess starch and place it in the slow cooker.
  2. Layer the boneless chicken thighs on top of the rice.
  3. In a bowl, mix together the chicken broth, lemon juice, garlic, herbs, salt, pepper, and paprika.
  4. Pour the broth mixture over the chicken and rice, ensuring the chicken is touching the liquid.
  5. Cover and cook on low for 4-6 hours, checking for doneness.
  6. Once cooked, fluff the rice with a fork and serve with additional lemon wedges.

Notes

For best results, avoid opening the slow cooker during cooking. Adjust cooking time based on your slow cooker model. Leftovers can be stored in the fridge for up to three days.
