Ingredients
- 4 large sweet potatoes, washed and peeled
- 2 cups heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 cup Gruyère cheese, shredded
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice sweet potatoes into uniform rounds about 1/8 inch thick.
- In a baking dish, layer sweet potato slices, pouring a mix of cream and cheese over each layer.
- Repeat until all sweet potatoes and sauce are used.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until golden brown and bubbly.
- Let the dish sit for 10 minutes before serving.
Notes
Use a mandoline for even slicing and consider adding sautéed onions or garlic for added flavor.
