Description

A quick and easy sheet pan recipe featuring kielbasa, sweet potatoes, and vibrant vegetables, coated in a delicious honey garlic sauce.


Ingredients

  • 14 oz Kielbasa, sliced into thick coins
  • 2 medium Sweet Potatoes, peeled and cubed
  • 1 large Red Onion, sliced into wedges
  • 1-2 Bell Peppers (any color), sliced into strips
  • 4 cloves Garlic, minced
  • 1/4 cup Honey
  • 2 tablespoons Olive Oil
  • 1 tablespoon Vinegar


Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Line a sheet pan with parchment paper to prevent sticking.
  3. Toss the sweet potatoes, onions, and bell peppers with honey, olive oil, and vinegar until glossy.
  4. Spread the veggies out evenly on the sheet pan.
  5. Scatter the sliced kielbasa over the vegetables.
  6. Roast in the oven for about 25-30 minutes, stirring halfway through.
  7. For extra crispiness, switch on the broiler for the last 5 minutes.
  8. Serve hot, straight from the pan.

Notes

Feel free to substitute other vegetables like broccoli, carrots, or zucchini as long as they are cut to similar sizes for even cooking.
