Ingredients
- 24 Oreo cookies
- 6 tablespoons unsalted butter, melted
- 24 oz (3 blocks) cream cheese, room temperature
- 1 cup sugar
- 3 large eggs, room temperature
- 1 cup sour cream
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 2-3 tablespoons red gel food coloring
Instructions
- Preheat oven to 350°F (177°C).
- Crush Oreo cookies in a food processor and combine with melted butter; press into a 9-inch springform pan.
- Prebake the crust for 8-10 minutes.
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, then fold in sour cream, cocoa powder, vanilla, and food coloring.
- Pour the batter over the crust.
- Bake in a water bath at 325°F (163°C) for 50-65 minutes until the edges are set.
- Cool slowly, then chill overnight before serving.
- Garnish with whipped cream, ganache, or sprinkles before serving.
