Description

A quick and satisfying shrimp stir fry with noodles, enhanced by garlic, ginger, and a savory-sweet sauce.


Ingredients

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1 tsp cornstarch
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 8 oz (225 g) wheat or rice noodles
  • 2 tbsp neutral oil
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 1 cup carrots, sliced
  • 2 scallions, sliced
  • 3 tbsp soy sauce
  • 1 1/2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 clove garlic, minced


Instructions

  1. Toss shrimp with cornstarch, salt, and white pepper.
  2. Cook noodles according to package directions, drain, and rinse; set aside.
  3. Heat a wok over high heat until hot, then add the oil.
  4. Sear shrimp for 1–2 minutes per side until opaque. Remove and set aside.
  5. Stir-fry vegetables for 1–2 minutes until crisp-tender.
  6. Add shrimp back into the wok with noodles and sauce; toss and cook for 1–2 minutes until the sauce thickens and coats everything.

Notes

Use high heat for proper searing and drying shrimp helps achieve a golden crust. Tailor the heat and noodles to your liking.
