Ingredients

  • 1–2 slices sturdy bread (about 45–60 g per slice)
  • 1 ripe avocado (about 150 g)
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • pinch of black pepper
  • 1 large egg
  • 1 tsp olive oil
  • flaky sea salt (for finishing)
  • optional: pinch of red pepper flakes


Instructions

  1. Toast 1–2 slices of sturdy bread to medium or dark golden brown.
  2. Mash the avocado with lemon juice, salt, and black pepper in a small bowl.
  3. Cook the egg in a skillet over medium-low heat with olive oil until cooked to your liking (sunny-side-up, poached, or soft-boiled).
  4. Spread the avocado on toast, top with the egg, and season with flaky sea salt, black pepper, and optional red pepper flakes.

Notes
