Description

A quick and healthy meal with flavorful ground chicken, mushrooms, and fresh herbs served over rice or quinoa.


Ingredients

  • 1 pound Ground Chicken
  • 8 ounces Mushrooms (shiitake or button)
  • 1/2 cup Fresh Cilantro
  • 1 handful Fresh Mint Leaves
  • 2 tablespoons Fish Sauce
  • 2 tablespoons Lime Juice
  • 1 teaspoon Chili Flakes
  • 1 finely chopped Shallot
  • 1 cup Cooked Jasmine Rice or Quinoa
  • As needed Fresh Vegetables (lettuce, cucumber, bell peppers)


Instructions

  1. Heat a large skillet over medium heat and add a drizzle of oil.
  2. Add finely chopped shallots and sauté for 2-3 minutes until translucent.
  3. Add ground chicken, breaking it apart, and cook for 5-7 minutes until golden brown.
  4. Stir in chopped mushrooms and sauté for an additional 4-5 minutes.
  5. Season with fish sauce, lime juice, and chili flakes, stirring thoroughly.
  6. Remove from heat and fold in fresh mint and cilantro.
  7. Serve over cooked rice or quinoa and garnish with fresh vegetables.
  8. Squeeze lime juice over the top before serving.

Notes

For extra flavor, marinate ground chicken with fish sauce and lime juice for 15 minutes before cooking. You can also make this vegetarian by substituting ground chicken with crumbled tofu or tempeh.
