Description

Delicious Moroccan-inspired chicken skewers that are easy to prepare and packed with flavor.


Ingredients

  • 1.5 pounds boneless, skinless chicken breast (cut into cubes)
  • 1/4 cup extra virgin olive oil
  • 4 cloves minced garlic
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons lemon juice
  • 1 set metal or wooden skewers (soaked in water for 30 minutes if wooden)


Instructions

  1. Cut the chicken breast into uniform, bite-sized cubes, approximately 1 to 1.5 inches in size.
  2. In a mixing bowl, combine the minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, sea salt, and black pepper.
  3. Add the olive oil and lemon juice to the spice mixture and whisk until cohesive.
  4. Coat the cubed chicken in the marinade, cover, and refrigerate for at least one hour or overnight.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated chicken pieces onto the skewers.
  7. Grill the skewers for about 10-15 minutes, turning occasionally for even cooking.
  8. Remove and let rest for a few minutes before serving garnished with herbs.
