Description

A one-pan meal featuring tender chicken and hearty orzo in a creamy white pesto sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup white pesto (made with fresh basil and cheese)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


Instructions

  1. Heat olive oil in a heavy-bottomed skillet over medium heat.
  2. Add the diced chicken and season with salt and pepper; sauté until golden brown and cooked through, about 6-8 minutes.
  3. Add the orzo and chicken broth to the skillet, stirring to combine.
  4. Bring to a simmer and let the orzo cook until al dente, about 10 minutes, until the liquid is mostly absorbed.
  5. Stir in the white pesto and cook for an additional 2-3 minutes until everything is well combined and heated through.
  6. Serve hot, garnished with fresh basil leaves.

Notes

Serve with a fresh garden salad and crusty bread. You can also sprinkle grated Parmesan on top for added flavor.
