Description
A one-pan meal featuring tender chicken and hearty orzo in a creamy white pesto sauce.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup white pesto (made with fresh basil and cheese)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a heavy-bottomed skillet over medium heat.
- Add the diced chicken and season with salt and pepper; sauté until golden brown and cooked through, about 6-8 minutes.
- Add the orzo and chicken broth to the skillet, stirring to combine.
- Bring to a simmer and let the orzo cook until al dente, about 10 minutes, until the liquid is mostly absorbed.
- Stir in the white pesto and cook for an additional 2-3 minutes until everything is well combined and heated through.
- Serve hot, garnished with fresh basil leaves.
Notes
Serve with a fresh garden salad and crusty bread. You can also sprinkle grated Parmesan on top for added flavor.
