Ingredients
- 2 lbs bone-in chicken thighs
- 4 cups chicken broth
- 3 carrots, chopped
- 2 potatoes, diced
- 2 celery stalks, chopped

- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté onions and garlic in a pan until fragrant.
- Combine chicken, vegetables, broth, and seasonings in a slow cooker.
- Set the slow cooker on low and cook for 6-8 hours until chicken is fork-tender.
- Remove bay leaf and adjust seasonings before serving.
