Description

A comforting classic with tender chicken, hearty vegetables, and aromatic herbs, slow-cooked to perfection.


Ingredients

  • 2 lbs bone-in chicken thighs
  • 4 cups chicken broth
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Sauté onions and garlic in a pan until fragrant.
  2. Combine chicken, vegetables, broth, and seasonings in a slow cooker.
  3. Set the slow cooker on low and cook for 6-8 hours until chicken is fork-tender.
  4. Remove bay leaf and adjust seasonings before serving.
  5. Serve in deep bowls, garnished with fresh parsley.

Notes

For thicker stew, stir in a cornstarch slurry 30 minutes before serving. Use hearty vegetables to avoid mushiness.
