A rich, aromatic dish featuring tender chicken thighs in a creamy sauce, perfect for busy weeknights.
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 cup plain yogurt
- 2 tbsp garam masala
- 1 tbsp cumin
- 1 tbsp coriander
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Marinate chicken in yogurt, garam masala, cumin, coriander, salt, and pepper for at least 30 minutes.
- Heat olive oil in a skillet and sear the marinated chicken on both sides.
- Transfer the seared chicken to the slow cooker.
- Add the diced tomatoes and heavy cream to the slow cooker.
- Cook on low for 4-6 hours or high for 2-3 hours.
- Adjust seasonings as necessary before serving.
- Serve over basmati rice or with naan bread, garnished with cilantro.
Notes
For a lighter version, substitute heavy cream with coconut milk or Greek yogurt, adding towards the end of cooking. Adjust spice levels according to preference.
