Description

A rich, aromatic dish featuring tender chicken thighs in a creamy sauce, perfect for busy weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 2 tbsp garam masala
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Marinate chicken in yogurt, garam masala, cumin, coriander, salt, and pepper for at least 30 minutes.
  2. Heat olive oil in a skillet and sear the marinated chicken on both sides.
  3. Transfer the seared chicken to the slow cooker.
  4. Add the diced tomatoes and heavy cream to the slow cooker.
  5. Cook on low for 4-6 hours or high for 2-3 hours.
  6. Adjust seasonings as necessary before serving.
  7. Serve over basmati rice or with naan bread, garnished with cilantro.

Notes

For a lighter version, substitute heavy cream with coconut milk or Greek yogurt, adding towards the end of cooking. Adjust spice levels according to preference.
