Description

A rich and aromatic slow cooker recipe that simplifies traditional Chicken Tikka Masala, allowing delicious flavors to meld beautifully.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 cup plain yogurt
  • 2 tablespoons garam masala
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 teaspoon cayenne pepper
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Marinate the chicken in yogurt, garam masala, cumin, coriander, cayenne pepper, and salt. Let it sit for at least 30 minutes or overnight.
  2. In a skillet, sauté the diced onion and minced garlic until translucent.
  3. Add the marinated chicken, sautéed onions and garlic, crushed tomatoes, and coconut milk into the slow cooker.
  4. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  5. Once done, serve over basmati rice or with naan, garnished with fresh cilantro and lime juice.

Notes

Adjust spice levels according to preference. Browning the chicken before slow cooking enhances flavors but is optional.
