Description

An easy, hands-off comfort meal yielding tender roast beef and rich au jus for dipping, perfect for weeknight dinners and gatherings.


Ingredients

  • 3–4 lb chuck roast
  • 1–2 tablespoons oil
  • 1 large onion, sliced
  • 4 cloves garlic, smashed
  • 2 cups low-sodium beef broth
  • 1/4 cup soy sauce (or tamari)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Season the chuck roast with salt and pepper.
  2. Sear the roast in a hot skillet with oil until browned on all sides (about 3–4 minutes per side).
  3. Transfer the roast to the slow cooker.
  4. Add sliced onion, smashed garlic, beef broth, soy sauce, Worcestershire sauce, thyme, and bay leaf to the slow cooker.
  5. Cook on low for 8 hours or high for 4–5 hours until the meat is fork-tender.
  6. Remove the roast, shred or slice it, and strain the cooking liquid.
  7. Optionally, reduce the cooking liquid on the stovetop to concentrate flavor or thicken with a cornstarch slurry.
  8. Serve the beef on toasted rolls with au jus for dipping.

Notes

For best flavor, always sear the roast first and strain/reduce the au jus before serving.
