Description

A comforting slow cooker dish featuring tender beef bites and hearty potatoes in a garlic butter sauce.


Ingredients

  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Fresh parsley, for garnish (optional)


Instructions

  1. Brown the beef bites in a skillet over medium-high heat until all sides are seared.
  2. In a slow cooker, layer the browned beef and baby potatoes.
  3. In a bowl, mix melted butter, minced garlic, beef broth, salt, pepper, thyme, and paprika.
  4. Pour the mixture over the beef and potatoes.
  5. Cover and cook on low for 6-8 hours, or until the beef is tender.
  6. Garnish with fresh parsley before serving.

Notes

Cut potatoes into larger chunks to prevent them from becoming mushy during cooking.
