A comforting slow cooker dish featuring tender beef bites and hearty potatoes in a garlic butter sauce.
Ingredients
- 2 pounds beef chuck roast, cut into bite-sized pieces
- 1 pound baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Fresh parsley, for garnish (optional)
Instructions
- Brown the beef bites in a skillet over medium-high heat until all sides are seared.
- In a slow cooker, layer the browned beef and baby potatoes.
- In a bowl, mix melted butter, minced garlic, beef broth, salt, pepper, thyme, and paprika.
- Pour the mixture over the beef and potatoes.
- Cover and cook on low for 6-8 hours, or until the beef is tender.
- Garnish with fresh parsley before serving.
Notes
Cut potatoes into larger chunks to prevent them from becoming mushy during cooking.
