Description

A comforting slow-cooked dish featuring tender beef bites and potatoes simmered in garlic butter, perfect for family dinners.


Ingredients

  • 2 lbs chuck roast or sirloin, cut into bite-sized pieces
  • 1 lb Yukon gold potatoes, diced
  • 1/2 cup garlic butter
  • 1 cup low sodium beef broth
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Heat a skillet over medium-high heat and sear the beef bites until browned on all sides.
  2. Transfer the seared beef to the slow cooker.
  3. Mix in the garlic butter, diced potatoes, beef broth, salt, and pepper.
  4. Cover and cook on low for 6-8 hours until the beef is tender.
  5. Serve with a sprinkle of fresh parsley on top.

Notes

Allow leftovers to cool completely before storing. They can be refrigerated for up to 3 days or frozen for up to 3 months.
