Ingredients
- 2 lbs chuck roast or sirloin, cut into bite-sized pieces
- 1 lb Yukon gold potatoes, diced
- 1/2 cup garlic butter
- 1 cup low sodium beef broth
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Heat a skillet over medium-high heat and sear the beef bites until browned on all sides.
- Transfer the seared beef to the slow cooker.
- Mix in the garlic butter, diced potatoes, beef broth, salt, and pepper.
- Cover and cook on low for 6-8 hours until the beef is tender.
- Serve with a sprinkle of fresh parsley on top.
Notes
Allow leftovers to cool completely before storing. They can be refrigerated for up to 3 days or frozen for up to 3 months.
