A hearty and flavorful slow cooker Korean beef dish with tender meat and a tangy, sweet sauce.
Ingredients
- 2 lbs beef chuck roast
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons sesame oil
- 2 tablespoons cornstarch (optional for thickening)
- Sliced bell peppers (optional)
- Fresh green onions, for garnish
- Sesame seeds, for garnish
- Cooked rice, for serving
Instructions
- Optional: Sear the beef in a hot skillet for a few minutes to lock in flavors.
- Place the beef in the slow cooker and add soy sauce, brown sugar, garlic, ginger, and sesame oil.
- Cook on low for 6-8 hours or on high for 4 hours, until the beef is fork-tender.
- In the last hour, add sliced bell peppers if desired.
- Before serving, garnish with green onions and sesame seeds.
Notes
Marinate the beef overnight for extra flavor. Serve over rice with steamed vegetables or in lettuce wraps.
