Description

A hearty and flavorful slow cooker Korean beef dish with tender meat and a tangy, sweet sauce.


Ingredients

  • 2 lbs beef chuck roast
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons sesame oil
  • 2 tablespoons cornstarch (optional for thickening)
  • Sliced bell peppers (optional)
  • Fresh green onions, for garnish
  • Sesame seeds, for garnish
  • Cooked rice, for serving


Instructions

  1. Optional: Sear the beef in a hot skillet for a few minutes to lock in flavors.
  2. Place the beef in the slow cooker and add soy sauce, brown sugar, garlic, ginger, and sesame oil.
  3. Cook on low for 6-8 hours or on high for 4 hours, until the beef is fork-tender.
  4. In the last hour, add sliced bell peppers if desired.
  5. Before serving, garnish with green onions and sesame seeds.

Notes

Marinate the beef overnight for extra flavor. Serve over rice with steamed vegetables or in lettuce wraps.
