A cozy and nourishing stew featuring chickpeas, butternut squash, and an aromatic blend of spices, perfect for slow cooking.
Ingredients
- 1 onion, diced
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 cans chickpeas, drained and rinsed
- 1 butternut squash, diced
- 2 cans diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp cinnamon
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Sauté onion, garlic, and ginger in a skillet until fragrant.
- Transfer sautéed mixture to the slow cooker.
- Add chickpeas, butternut squash, diced tomatoes, spices, and vegetable broth.
- Cover and cook on low for 6-8 hours.
- Stir, adjust seasoning, and serve warm garnished with cilantro or parsley.
Notes
For a richer flavor, sauté aromatics before adding to the slow cooker. Serve with crusty bread or over couscous.
