Ingredients
- 4-6 bell peppers
- 1 lb ground meat (beef, turkey, or plant-based)
- 1 cup cooked rice
- 1 can diced tomatoes

- Seasonings (salt, pepper, oregano, etc.)
Instructions
- Prep the bell peppers by slicing the tops off and removing seeds.
- In a large bowl, mix ground meat, cooked rice, diced tomatoes, onion, garlic, and seasoning.
- Stuff the mixture into the peppers and arrange in the slow cooker.
- Add a splash of broth over the peppers to keep them moist.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
