Ingredients

  • 4-6 bell peppers
  • 1 lb ground meat (beef, turkey, or plant-based)
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup broth (beef or vegetable)
  • Seasonings (salt, pepper, oregano, etc.)


Instructions

  1. Prep the bell peppers by slicing the tops off and removing seeds.
  2. In a large bowl, mix ground meat, cooked rice, diced tomatoes, onion, garlic, and seasoning.
  3. Stuff the mixture into the peppers and arrange in the slow cooker.
  4. Add a splash of broth over the peppers to keep them moist.
