A comforting dish that combines the classic flavors of tacos in a hearty casserole made effortlessly in a slow cooker.
Ingredients
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 can diced tomatoes
- 2 tbsp taco seasoning
- 2 cups shredded cheese
- 1 onion, diced
- Tortilla chips, for serving
- Fresh toppings (lettuce, tomatoes, avocado) for garnish
Instructions
- Brown the ground beef and onion in a skillet over medium heat. Drain excess fat.
- Layer the browned beef, black beans, corn, diced tomatoes, taco seasoning, and cheese in the slow cooker.
- Cook on high for 4 hours or low for 6 hours, adding cheese during the last 30 minutes of cooking.
- Serve hot, topped with fresh lettuce, tomatoes, or avocado, and with tortilla chips on the side.
Notes
For a gluten-free option, use gluten-free taco seasoning. For a vegetarian version, replace ground beef with lentils or beans.
