Description

A comforting dish that combines the classic flavors of tacos in a hearty casserole made effortlessly in a slow cooker.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes
  • 2 tbsp taco seasoning
  • 2 cups shredded cheese
  • 1 onion, diced
  • Tortilla chips, for serving
  • Fresh toppings (lettuce, tomatoes, avocado) for garnish


Instructions

  1. Brown the ground beef and onion in a skillet over medium heat. Drain excess fat.
  2. Layer the browned beef, black beans, corn, diced tomatoes, taco seasoning, and cheese in the slow cooker.
  3. Cook on high for 4 hours or low for 6 hours, adding cheese during the last 30 minutes of cooking.
  4. Serve hot, topped with fresh lettuce, tomatoes, or avocado, and with tortilla chips on the side.

Notes

For a gluten-free option, use gluten-free taco seasoning. For a vegetarian version, replace ground beef with lentils or beans.
