Ingredients

  • 1.5 lbs chicken breast
  • 1 can (15 oz) Great Northern beans, drained
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 1 can (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream
  • Cilantro, for garnish
  • Avocado, for garnish
  • Sour cream, for garnish


Instructions

  1. Season the chicken with chili powder, cumin, and salt.
  2. Place the chicken in the slow cooker.
  3. Add diced onions, minced garlic, drained beans, green chiles, and chicken broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. After cooking, shred the chicken, then stir in the heavy cream.
  6. Serve with cilantro, avocado, and sour cream on top.

Notes

For added flavor, consider browning the chicken before slow cooking. The chili can be customized with various beans or spices.
