Description

Irresistibly soft and buttery cookies filled with a sweet date mixture, perfect for any occasion.


Ingredients

  • 1 cup Medjool dates, chopped
  • 1/4 cup water
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, simmer chopped dates with water until soft and gooey, then set aside to cool.
  3. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add in egg and vanilla extract, mix well.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture until well combined.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. Roll out the dough and cut into circles.
  9. Place a spoonful of date filling between two cookie circles, sealing the edges.
  10. Bake for 12-15 minutes or until lightly golden.
  11. Let cool on a wire rack before serving.

Notes

Using ripe Medjool dates enhances sweetness and texture. Make sure to chill the dough for better handling.
