Ingredients
- 1 cup Medjool dates, chopped
- 1/4 cup water
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, simmer chopped dates with water until soft and gooey, then set aside to cool.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in egg and vanilla extract, mix well.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until well combined.
- Chill the dough in the refrigerator for at least 30 minutes.
- Roll out the dough and cut into circles.
- Place a spoonful of date filling between two cookie circles, sealing the edges.
- Bake for 12-15 minutes or until lightly golden.
- Let cool on a wire rack before serving.
Notes
Using ripe Medjool dates enhances sweetness and texture. Make sure to chill the dough for better handling.
