Description

Soft and chewy blondies with a crackly cinnamon-sugar top that are perfect for any occasion.


Ingredients

  • 6 tbsp (85 g) unsalted butter
  • 1 cup (200 g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup (95 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/4 tsp fine sea salt
  • 1 tsp ground cinnamon
  • For topping: 2 tbsp granulated sugar + 1 tsp ground cinnamon (mixed), optional coarse sugar for sprinkling


Instructions

  1. Melt the butter and stir in light brown sugar until smooth.
  2. Whisk in the egg and vanilla until well combined.
  3. Fold in flour, baking powder, salt, and ground cinnamon until just combined.
  4. Pour the batter into a parchment-lined 8×8-inch pan.
  5. Evenly sprinkle the cinnamon-sugar mixture on top.
  6. Bake at 350°F (175°C) for 22–26 minutes until the center is set but still slightly jiggly.
  7. Cool before cutting into bars and serving.

Notes

For best results, check the brownies a minute or two before the suggested baking time. Store in an airtight container for up to 3 days, or freeze for longer storage.
