Description

A comforting and hearty stew combining savory, spicy, and umami flavors for a deliciously filling dish.


Ingredients

  • 1 lb ground beef
  • 1 lb sausage
  • 4 cups chicken or vegetable broth
  • 1 cup kimchi
  • 2 cups sliced vegetables (carrots, zucchini, mushrooms)
  • 1 package ramen noodles (or gluten-free alternative)
  • 2 green onions, chopped
  • 1 tbsp red pepper flakes (optional)
  • 1 tbsp gochujang (optional)
  • Salt and pepper to taste


Instructions

  1. In a Dutch oven, sauté the ground beef and sausage until browned.
  2. Add the sliced vegetables and cook until slightly softened.
  3. Pour in the broth and bring to a boil.
  4. Add the kimchi and ramen noodles, stirring occasionally.
  5. Season with salt, pepper, red pepper flakes, and gochujang, if desired.
  6. Reduce heat and allow to simmer for 30 minutes, adding more broth if necessary.
  7. Serve hot, topped with green onions and sesame seeds.

Notes

Store leftovers in an airtight container for up to 3 days; can be frozen for up to 3 months.
