Ingredients
- 1 cup Butternut Squash (cooked and mashed)
- 2 cups All-Purpose Flour (or gluten-free flour blend)
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 teaspoon Cinnamon (or other spices like nutmeg)
- 1 stick Butter (cold; can use margarine for dairy-free option)
- 1 cup Buttermilk (or whole milk with lemon juice)
- 1/2 cup Dried Cranberries
- 1/2 cup Chopped Walnuts
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the flour, baking powder, salt, and cinnamon.
- Cut the cold butter into the flour mixture until it looks like coarse crumbs.
- Stir in the mashed butternut squash, buttermilk, dried cranberries, and walnuts until just combined.
- Turn the dough onto a floured surface and gently knead it a few times. Pat it into a thickness of about 1 inch.
- Cut out biscuits with a biscuit cutter or a glass and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the biscuits are golden brown.
- Remove from the oven and let them cool slightly before serving.

Store biscuits in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
