Description

Warm and comforting biscuits made with butternut squash and spices, perfect for holiday feasts or as a delicious snack.


Ingredients

  • 1 cup Butternut Squash (cooked and mashed)
  • 2 cups All-Purpose Flour (or gluten-free flour blend)
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon (or other spices like nutmeg)
  • 1 stick Butter (cold; can use margarine for dairy-free option)
  • 1 cup Buttermilk (or whole milk with lemon juice)
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Walnuts


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, salt, and cinnamon.
  3. Cut the cold butter into the flour mixture until it looks like coarse crumbs.
  4. Stir in the mashed butternut squash, buttermilk, dried cranberries, and walnuts until just combined.
  5. Turn the dough onto a floured surface and gently knead it a few times. Pat it into a thickness of about 1 inch.
  6. Cut out biscuits with a biscuit cutter or a glass and place them on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until the biscuits are golden brown.
  8. Remove from the oven and let them cool slightly before serving.
