Description

A warm and nourishing soup made with roasted parsnips and warming spices, perfect for chilly days.


Ingredients

  • 1 pound parsnips, peeled and chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Juice of 1 lemon (optional)
  • Fresh herbs for garnish (parsley or chives)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chopped parsnips in olive oil, salt, and spices, then spread out on a baking sheet.
  3. Roast for about 20 minutes until golden.
  4. In a pot, sauté onions and garlic until translucent.
  5. Add roasted parsnips and vegetable broth, bring to a simmer.
  6. Blend until smooth.
  7. Serve garnished with fresh herbs and a drizzle of olive oil or vegan yogurt.

Notes

For added creaminess, blend in a handful of cashews or a splash of coconut milk. Adjust spices to your taste.
