Description

Delicious spiced chickpeas served with fluffy fried bread, perfect for any meal.


Ingredients

  • 2 tbsp Avocado Oil (or neutral oil)
  • 1 piece Dried Bay Leaf
  • 3 pods Green Cardamom
  • 4 pieces Cloves
  • 0.5 inch Cinnamon
  • 1 tbsp Cumin Seeds
  • 1 large Red Onion (finely diced)
  • 2 tsp Ginger Garlic Paste
  • 3 medium Tomatoes (finely chopped)
  • 0.5 tsp Turmeric
  • 0.5 tsp Cayenne (adjust for spice preference)
  • 4 cups Chickpeas (canned or cooked)
  • to taste Salt
  • 2 tbsp Chana Masala Spice Mix
  • 1 Lemon or Lime (juice)
  • optional Fresh Cilantro (for garnishing)
  • 2 cups Unbleached All Purpose Flour (or whole wheat flour)
  • 1 tsp Sugar
  • 0.5 cup Vegan Yogurt
  • Vegetable Oil (for deep frying)


Instructions

  1. Heat avocado oil in a large pan over medium heat. Add bay leaf, cardamom, cloves, and cinnamon. Sauté for a minute until fragrant.
  2. Add cumin seeds and diced red onion. Sauté until onions are golden brown.
  3. Stir in ginger garlic paste, followed by tomatoes, turmeric, and cayenne. Cook until tomatoes break down.
  4. Add chickpeas, salt, and chana masala. Stir well and cook for 5-7 minutes. Squeeze lemon or lime juice and mix.
  5. In a bowl, combine flour, sugar, yogurt, and enough water to form a soft dough. Knead well and let rest for 30 minutes.
  6. Roll out dough into circles. Heat vegetable oil in a deep pan and fry bhaturas until puffed and golden brown. Drain excess oil on paper towels.

Notes

For extra fluffiness, let the bhatura dough rest longer and adjust spice level as desired.
