A comforting and flavorful Spicy Chicken Stew that warms the heart and fills the stomach, perfect for busy weeknights.
Ingredients
- 1 lb chicken thighs, bone-in
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon paprika
- Salt, to taste
- Black pepper, to taste
- Cilantro, for garnish
- Sour cream, for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken pieces and brown on all sides, about 5-7 minutes.
- Remove the chicken and set aside. In the same pot, add onion, garlic, bell pepper, and carrots; sauté for 5 minutes.
- Add the diced tomatoes, chicken broth, cumin, chili powder, and paprika. Stir well.
- Return the chicken to the pot and bring to a simmer. Cover and cook on low heat for 45 minutes.
- Adjust seasoning with salt and pepper. Serve hot, garnished with cilantro and a dollop of sour cream, if desired.
Notes
Allow the stew to simmer gently to develop rich flavors. Use a heavy-bottomed pot for even cooking.
