Description

A comforting and flavorful Spicy Chicken Stew that warms the heart and fills the stomach, perfect for busy weeknights.


Ingredients

  • 1 lb chicken thighs, bone-in
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • Cilantro, for garnish
  • Sour cream, for serving (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and brown on all sides, about 5-7 minutes.
  2. Remove the chicken and set aside. In the same pot, add onion, garlic, bell pepper, and carrots; sauté for 5 minutes.
  3. Add the diced tomatoes, chicken broth, cumin, chili powder, and paprika. Stir well.
  4. Return the chicken to the pot and bring to a simmer. Cover and cook on low heat for 45 minutes.
  5. Adjust seasoning with salt and pepper. Serve hot, garnished with cilantro and a dollop of sour cream, if desired.

Notes

Allow the stew to simmer gently to develop rich flavors. Use a heavy-bottomed pot for even cooking.
