Delicious and quick Spicy Schezwan Roti Rolls filled with stir-fried vegetables and bold Schezwan sauce, perfect for any meal.
Ingredients
- 4 whole wheat rotis
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup carrots, julienned
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 4 tablespoons Schezwan sauce
- Sesame seeds and cilantro for garnish (optional)
Instructions
- Stir-fry the bell peppers, zucchini, and carrots with minced garlic and ginger in a non-stick skillet over medium heat until tender.
- Add the Schezwan sauce and cook for an additional 2-3 minutes until everything is well coated and fragrant.
- Warm the rotis either homemade or store-bought.
- Layer the vegetable filling onto a warm roti and roll it up tightly.
- Garnish with sesame seeds or chopped cilantro if desired, and serve with dipping sauce.
Notes
Customize the filling with your favorite vegetables. If concerned about spice, start with less Schezwan sauce and adjust to taste.
