Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1 cup sugar
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp salt
- 1/4 cup vegetable oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, eggs, and sugar until smooth.
- In another bowl, combine flour, baking powder, and spices.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50 minutes or until a toothpick comes out clean.
- Allow to cool before slicing and serving.
Notes
For a nutty addition, stir in walnuts or pecans. Use fresh pumpkin for the best flavor.
