Festive and delightful chocolate cupcakes decorated to resemble spooky monsters, perfect for Halloween celebrations.
Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 1/2 cups sugar
- 2 large eggs
- 1 cup unsalted butter, softened
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- Buttercream or cream cheese frosting
- Colored icing
- Candy eyes
- Assorted edible decorations
Instructions
- Preheat oven to 350°F (175°C) and line cupcake pans with liners.
- In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream together butter and sugar until fluffy. Add eggs one at a time, mixing well.
- Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
- Pour batter into cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
- Frost cooled cupcakes with buttercream or cream cheese frosting.
- Decorate with colorful icing, candy eyes, and fun toppings to create monster faces.
Notes
Store leftover cupcakes in an airtight container for up to three days, or freeze for up to three months.
