A flavorful one-pot meal featuring tender steak, creamy queso, and hearty rice, perfect for family dinners and gatherings.

Ingredients

  • 1 lb flank steak
  • 1 cup rice
  • 2 cups beef broth
  • 1 cup queso dip
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Cilantro, jalapeños, and tomatoes for garnish

Instructions

  1. Marinate the steak with lime juice, olive oil, and spices for at least 30 minutes.
  2. In a hot skillet, sear the marinated steak until browned on both sides, then remove from the skillet.
  3. Sauté onions and garlic in the same skillet until translucent.
  4. Add the rice to the skillet, followed by the beef broth and seared steak.
  5. Bring to a simmer, then cover and cook until rice is tender and has absorbed the flavors.
  6. Stir in the queso dip until melted and creamy.
  7. Serve hot, garnished with cilantro, jalapeños, and tomatoes.

Notes

For a vegetarian option, substitute the steak with black beans or sautéed mushrooms. Adjust seasoning to taste while cooking.
