A delightful combination of tender chicken glazed with sticky apple cider and a refreshing autumn slaw, perfect for cozy fall gatherings.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup apple cider
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup apple cider vinegar
- 1 tablespoon honey
- Fresh parsley or cilantro, for garnish
Instructions
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sauté the chicken until golden brown.
- In a separate pot, reduce the apple cider until thickened and syrupy.
- Once the chicken is nearly cooked, pour the glaze over it and finish cooking in the oven.
- In a bowl, combine cabbage, carrots, vinegar, and honey to make the slaw, mixing just before serving.
- Plate the chicken on a bed of slaw and garnish with fresh herbs.
Notes
