Description

A delightful combination of tender chicken glazed with sticky apple cider and a refreshing autumn slaw, perfect for cozy fall gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup apple cider
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • Fresh parsley or cilantro, for garnish


Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and sauté the chicken until golden brown.
  3. In a separate pot, reduce the apple cider until thickened and syrupy.
  4. Once the chicken is nearly cooked, pour the glaze over it and finish cooking in the oven.
  5. In a bowl, combine cabbage, carrots, vinegar, and honey to make the slaw, mixing just before serving.
  6. Plate the chicken on a bed of slaw and garnish with fresh herbs.

Notes

Serve with quinoa or brown rice for a complete meal. Store leftovers in an airtight container for up to 3 days.
