Description

A delightful pie featuring a flaky crust filled with a sweet and tart combination of strawberries and apples.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 cup strawberries, hulled and sliced
  • 2 cups apples, peeled and sliced
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 egg, for egg wash (optional)


Instructions

  1. In a mixing bowl, combine flour and butter until mixture resembles coarse crumbs.
  2. Add ice water gradually, mixing until a dough forms. Chill for 30 minutes.
  3. In another bowl, combine strawberries, apples, sugar, cornstarch, cinnamon, and lemon juice.
  4. Preheat oven to 350°F (175°C).
  5. Roll out dough and fit into a pie pan. Fill with fruit mixture.
  6. Roll out remaining dough for a top crust or lattice and place over the filling, sealing the edges.
  7. If desired, brush with egg wash.
  8. Bake for 45 minutes, or until the crust is golden and filling is bubbling.
  9. Allow pie to cool before serving.

Notes

For a gluten-free version, substitute regular flour with a gluten-free flour blend. You can also replace butter with coconut oil for a vegan option.
