Description
A delightful pie featuring a flaky crust filled with a sweet and tart combination of strawberries and apples.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 1 cup strawberries, hulled and sliced
- 2 cups apples, peeled and sliced
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1 egg, for egg wash (optional)
Instructions
- In a mixing bowl, combine flour and butter until mixture resembles coarse crumbs.
- Add ice water gradually, mixing until a dough forms. Chill for 30 minutes.
- In another bowl, combine strawberries, apples, sugar, cornstarch, cinnamon, and lemon juice.
- Preheat oven to 350°F (175°C).
- Roll out dough and fit into a pie pan. Fill with fruit mixture.
- Roll out remaining dough for a top crust or lattice and place over the filling, sealing the edges.
- If desired, brush with egg wash.
- Bake for 45 minutes, or until the crust is golden and filling is bubbling.
- Allow pie to cool before serving.
Notes
For a gluten-free version, substitute regular flour with a gluten-free flour blend. You can also replace butter with coconut oil for a vegan option.
