Description

Delightful cheesecake chunks with a crunchy topping and fresh strawberries, perfect for any occasion.


Ingredients

  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup granulated sugar
  • 24 ounces cream cheese, softened
  • 1/2 cup melted unsalted butter
  • 2 cups graham cracker crumbs
  • 3 tablespoons melted butter
  • 1/2 cup freeze-dried strawberries or strawberry Jell-O powder
  • 1 1/2 cups golden Oreo cookies, crushed
  • 1 tablespoon fresh lemon juice
  • 1/2 cup granulated sugar
  • 1 1/2 cups chopped fresh strawberries
  • White chocolate, melted, for drizzling
  • More strawberry crunch mix, for sprinkling


Instructions

  1. Preheat your oven to 325°F. Line a 9×13-inch baking dish with parchment paper and grease it well.
  2. In a large bowl, stir together the graham cracker crumbs and melted butter until damp. Press this mixture into the bottom of your lined pan and bake for about 10 minutes. Let cool.
  3. In another bowl, beat the softened cream cheese with 1 cup of granulated sugar until creamy. Add eggs one by one, mixing in between, and stir in the vanilla until smooth.
  4. Spread the cream cheese filling over the cooled crust and smooth it out. Bake for about 40–45 minutes until set but still slightly jiggly in the middle. Let cool on the counter, then refrigerate for at least 4 hours or overnight.
  5. In a pan, mix chopped strawberries, 1/2 cup granulated sugar, and lemon juice. Cook over medium heat, stirring until soft and juices thicken, about 5–7 minutes. Let cool.
  6. Combine golden Oreo crumbles, melted butter, and freeze-dried strawberries or strawberry Jell-O powder in a bowl. Stir until coated and set aside.
  7. Once chilled, lift the cheesecake out and chop into desired pieces. Place on a plate or tray.
  8. Drizzle with strawberry sauce, sprinkle with strawberry crunch, and zigzag with melted white chocolate. Serve cold.

Notes

For easier mixing, allow cream cheese to soften at room temperature. Adjust sweetness by altering sugar amounts.
