Ingredients

  • 1 cup Quartered Fresh Strawberries
  • 1 cup Granulated Sugar
  • 1 tablespoon Lemon Juice
  • 1.5 cups Cake Flour
  • 1.5 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 2 large Egg Whites
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Buttermilk
  • 8 ounces Cream Cheese
  • 2 cups Powdered Sugar
  • 1/2 cup Freeze-Dried Strawberries


Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. In a bowl, mix the quartered fresh strawberries, granulated sugar, and lemon juice. Stir well and let it sit for about 10 minutes.
  3. In another bowl, combine the cake flour, baking powder, baking soda, and salt. Whisk well.
  4. In a large mixing bowl, cream together the unsalted butter and the remaining granulated sugar until light and fluffy.
  5. Add the egg whites and vanilla extract to the butter mixture. Mix until fully combined.
  6. Alternate adding the dry ingredients and buttermilk to the butter mixture. Start with the dry, add buttermilk, and repeat until everything is mixed.
  7. Fold in the strawberry mixture gently.
  8. Fill each cupcake liner about 2/3 full with the batter.
  9. Bake for about 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  10. For the frosting, beat the cream cheese until smooth, gradually adding the powdered sugar while beating until fluffy. Crush the freeze-dried strawberries and stir into the frosting.
  11. Once the cupcakes are cool, generously pipe or spread the creamy frosting on top.

Notes

Store in an airtight container in the refrigerator. They will stay fresh for about 3-5 days. Keep the frosting separate until ready to serve.
