Ingredients
- 1 cup Quartered Fresh Strawberries
- 1 cup Granulated Sugar
- 1 tablespoon Lemon Juice
- 1.5 cups Cake Flour
- 1.5 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1/2 cup Unsalted Butter
- 2 large Egg Whites
- 1 teaspoon Vanilla Extract
- 1/2 cup Buttermilk
- 8 ounces Cream Cheese
- 2 cups Powdered Sugar
- 1/2 cup Freeze-Dried Strawberries
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
- In a bowl, mix the quartered fresh strawberries, granulated sugar, and lemon juice. Stir well and let it sit for about 10 minutes.
- In another bowl, combine the cake flour, baking powder, baking soda, and salt. Whisk well.
- In a large mixing bowl, cream together the unsalted butter and the remaining granulated sugar until light and fluffy.
- Add the egg whites and vanilla extract to the butter mixture. Mix until fully combined.
- Alternate adding the dry ingredients and buttermilk to the butter mixture. Start with the dry, add buttermilk, and repeat until everything is mixed.
- Fold in the strawberry mixture gently.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for about 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
- For the frosting, beat the cream cheese until smooth, gradually adding the powdered sugar while beating until fluffy. Crush the freeze-dried strawberries and stir into the frosting.
- Once the cupcakes are cool, generously pipe or spread the creamy frosting on top.
Notes
Store in an airtight container in the refrigerator. They will stay fresh for about 3-5 days. Keep the frosting separate until ready to serve.
