Description
A light and fluffy strawberry mousse that’s perfect for warm days and special occasions.
Ingredients
- 226 grams cream cheese or coconut cream
- 113 grams yogurt or additional cream cheese or coconut cream
- 130 grams powdered sugar or sugar-free alternative
- 5 medium strawberries, hulled
- 0.25 teaspoon vanilla bean paste (optional)
Instructions
- Allow cream cheese to reach room temperature for optimal blending or ensure coconut cream is thick and smooth. Discard any cans of coconut cream that are hard or flaky.
- Remove stems from strawberries and puree them in a blender or food processor until smooth.
- Add cream cheese or coconut cream, yogurt, powdered sugar, strawberry puree, and vanilla bean paste (if using) to a mixing bowl. Blend until the mixture is smooth and homogenous.
- Transfer the mousse to serving dishes and refrigerate for several hours to set.
- Serve chilled, garnished with fresh strawberry slices or whipped cream.
Notes
For a richer flavor, use full-fat cream cheese or coconut cream. You can store leftovers in the refrigerator for up to three days.
