Ingredients

  • 2 medium sweet potatoes
  • 1 ripe avocado
  • 1 can black beans, drained and rinsed
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick the sweet potatoes with a fork and bake for about 40 minutes, or until tender.
