Description

A tender and flavorful pot roast with aromatic herbs and a rich sauce, perfect for family dinners and special occasions.


Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 1 onion, diced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste


Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides for about 4-5 minutes.
  3. Transfer the seared roast to a slow cooker.
  4. Add garlic, beef broth, red wine, carrots, potatoes, onion, rosemary, and thyme into the slow cooker.
  5. Cover and cook on low for 6-8 hours until the roast is fork-tender.
  6. Remove the roast and let it rest before slicing. Serve with the vegetables and sauce.

Notes

For a thicker gravy, remove the lid during the last hour of cooking.
