A tender and flavorful pot roast with aromatic herbs and a rich sauce, perfect for family dinners and special occasions.
Ingredients
- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, diced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Season the chuck roast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the roast on all sides for about 4-5 minutes.
- Transfer the seared roast to a slow cooker.
- Add garlic, beef broth, red wine, carrots, potatoes, onion, rosemary, and thyme into the slow cooker.
- Cover and cook on low for 6-8 hours until the roast is fork-tender.
- Remove the roast and let it rest before slicing. Serve with the vegetables and sauce.
Notes
For a thicker gravy, remove the lid during the last hour of cooking.
